Taco salad

Taco salad was the best ever- and meatless! So flavorful!

First- I toasted old, stale Tostitos under the broiler with 3 jalapeños (I had shriveling in the fridge).

Then, sauté 1/2 red onion (diced), 1 T olive oil, heat 1/2 block of Lightlife veggie crumbles with a drained and rinsed can of black beans and 1 T chili powder, 1 t garlic, cumin, cilantro, and 1/4 t cayenne and salt. Add 1/2 cup water til saucy. Add frozen corn (1/4 bag).

Then, make salads including things like: lettuce, radishes, green onion, shredded Colby jack, chips on top, topped with  “meat mix”, salsa, plain Greek yogurt, avocado, and drizzle on the dressing.





DRESSING:
Dressing:
1/4 cup Caesar dressing (or some other milk based type item)
Juice of 1 lemon(about 2 tbsp)
1 t apple cider vinegar
1 clove of garlic, or 1/2 t powder
1/2 t onion powder
1 t dried dill and/or chives
1/2 t dried oregano
1 t cumin
1/2 t paprika
1/2 t salt
