Mediterranean Fish dish

Very tasty dish, with a lot of flexibility

3 Fish filets (I used haddock, it is what was in my freezer, but you could use other white fish)
Lemon Juice
Onions
Eggplant
Garlic
White wine or broth
Tomatoes
Olives or capers
Chick peas
Feta
Basil

FISH:
Season fish filets on both sides with salt and pepper.
Heat 1 T of olive oil in a frying pan; sauté one side of filet on med high for several minutes.
Cover with lemon juice, flip and repeat.
Remove from pan.

SAUCE:
In that same pan, heat 1 T of olive oil. Add 1/2 c chopped onions and 1-2 c chopped eggplant and cook for 2-3 minutes.
Add 1 t chopped garlic or garlic powder and cook for one more minute.
Add 1/2 c white wine and deglaze the pan.
Add 3 diced tomatoes, 1 T chopped olives (or capers), and cook for 2-3 minutes.
Add 1 can of chick peas and 1/2 c f feta.
Add 1/4 c lemon juice or water, and let the sauce reduce by half (3-4 minutes).
Sprinkle with fresh basil and serve with the fish.
