Breakfast Bowls

After hearing about new research that a Mediterranean diet helps prevent depression, I was motivated to start with better food choices today- as I’d been slacking.

Breakfast Bowl

Cook 1 c quinoa with water and salt. As it finishes, add 4 eggs for them to half poach until soft.
Meanwhile, sauté sliced mushrooms with salt.
Dice tomatoes and avocado; place in serving bowls- top with salt, pepper, olive oil and a splash of red wine vinegar.
Add mushrooms to bowls.
Add a spoonful of hummus.
Add the quinoa and eggs.
Top with S&P and a splash of olive oil.

Tonight I made this for dinner with a few tweaks- added arugula and beet greens to the quinoa, and instead of mushrooms, added cooked beets (made in Instant pot- whole with 1” stem on high for 20 minutes and 10 min natural release). Added eggs to quinoa, as before. Served with diced tomato, chick peas, artichoke hearts, feta, hummus, and some dressing.
