Best pasta salad
1lb pasta, fusilli
12 sun dried tomatoes
1 c parsley, fresh (and basil if you don’t have a full cup)
2 T red wine vinegar
6T olive oil
2 t garlic powder
2 t capers, with splash of brine
1/2 c Parmesan cheese
1 lb tomatoes
1 lb feta
Boil salted water for the pasta, cooking until al dente.
Meanwhile- In the food processor, add 1/2 the sun dried tomatoes (with splash of oil), capers and brine, garlic, oil, salt, pepper, parsley, and parm cheese. Pulse until smooth.
Once pasta is drained, add diced tomatoes, remaining diced sun dried tomatoes, feta and dressing. Add olive oil if needed.
