Lemon Loaf cake
Lemon loaf cake:
Ingredients
½ cup unsalted butter, softened, 1 stick1 ¼ cups granulated sugar- 3 large eggs, room temperature
1 cup sour cream or Greek yogurt2 tablespoons fresh lemon juice1 tablespoon lemon zest1 tablespoon vanilla extract1 ½ cups all purpose flour2 teaspoons baking powder1 teaspoon kosher salt
LEMON ICING
2 cups powdered sugar1 tablespoon milk2 tablespoons fresh lemon juice
Add sugar to mixing bowl and zest lemon into it. Stir sugar and zest to break it down.
Meanwhile, line parchment into loaf pan, and preheat oven to 350.
In the mixing bowl, add butter and salt.
Add each egg, one at a time.
Add vanilla, 2 T lemon juice and yogurt.
Add flour and baking powder.
Pour over parchment and bake 50-60 minutes.
Meanwhile, add confectioners sugar, remaining juice and a splash of dairy. (I also added a pat of butter.)
