Buffalo Cauliflower Bites

I was taking appetizers to a Super Bowl party, and with someone else taking wings- I wanted to take Buffalo Cauliflower Bites. Here, I merge together several recipes.

CAULIFLOWER:

Oil
3/4 c cornstarch
1/4 c cornmeal (or if you are out, like me, cornbread mix)
2/3 c milk or coconut milk
1 T hot sauce, like Franks
1 lb cauliflower, cut into 1.5" pieces

In a dutch oven, add the oil until about 1.5" deep. Heat on med-high until about 400 degrees.

Meanwhile, combine first 2 ingredients plus S&P in a small bowl.

In a separate bowl, combine the milk and hot sauce.

Cut the cauliflower, and add to the milk bowl. Toss to coat well.

Dump the dry ingredients over the cauliflower and toss until coated.

Fry the cauliflower, adding a few pieces at a time. Fry about 3 minutes, until lightly brown.

Cover cauliflower is buffalo sauce- eat warm if you can!


BUFFALO SAUCE:

1/3 c Franks hot sauce
1/4 c butter (or use coconut oil)
3/4 T white vinegar
1/8 t Worcestershire sauce
1/8 t cayenne pepper
1/8 t garlic powder
salt

Mix all ingredients in a small pan.



DIPPING SAUCE:
(I used Greek yogurt and Hidden Valley ranch mix)
