Greek pasta with chicken sausages



I wanted to make this dish again, but was not in the mood for chicken. I went to WF's and found a chicken sausage with spinach and feta. It seemed like the perfect option to add to the Greek pasta!

  • 1 (16 ounce) package penne pasta
  • 1 1/2 tablespoons butter
  • 1/2 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 pound chicken sausage - cut into bite-size pieces
  • 1 T capers
  • 2 tomatoes, chopped
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons chopped fresh parsley (I used dried)
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • salt to taste
  • ground black pepper to taste
